Certified Executive Chef Attends Wine Study in Napa Valley
The Rensselaerville Meeting Center’s Certified Executive Chef, Joe Maloney, recently returned from a Professional Wine Studies class held at the Culinary Institute of America’s Greystone campus in Napa Valley, Ca.
During the week long “Mastering Wines I” class, Joe learned to professionally and objectively evaluate, purchase and recommend wines from all over the world to his guests at the meeting center. The class, instructed by the CIA’s Rudd Wine Center Chairman and reknowned food and wine author, Karen McNeil, A.C.W.P., encompassed tours and private tastings of famous Napa Valley wineries such as Franciscan, Domaine Carneros and Shafer. In addition to winery tours, Joe and his classmates tasted and evaluated wines in the CIA’s state of the art wine tasting classrooms while learning how to fine tune their palates and wine vocabulary.
Of the class, Joe says “My ability to understand how wines are made and how viticulturally important factors such as soil, climate, weather patterns and individual winemakers are to the wine in my guests’ glass has increased tremendously from taking this class.” Joe recites a quote given by Karen McNeil at the beginning of the class: “Wine drinkers do not need help to know what they think. They need help in saying what they think.”
This quote sums up Joe’s experience in Napa Valley . Says Joe, “I learned how to better speak the language of wine and in the process walked away with enormous respect for the process of wine making from the grapes on the vine to the juice in the bottle.”
